Naturally Sweetened Banana Pumpkin Fudgy Brownies


I'll stand up for these brownies!  They are really good with no added or artificial sugars (so no weird after taste--- can I get an amen???)!!!  They are fudgy and delicious.  My one-year-old son can have them as well, which means he is VERY happy (he is not allowed to have sugar other than in fruit).  My favorite add-ins are unsweetened coconut flakes and craisins (pictured above).  Yum!


Naturally Sweetened Banana Pumpkin Fudgy Brownies



Ingredients:

1 cup pumpkin puree (can substitute cooked sweet potato or other squash instead)
3 ripe medium bananas pureed
2 eggs
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 cup almond flour
1 tsp instant coffee (decaf or reg) (optional for enhanced chocolate flavor)

Add-ins (optional): unsweetened coconut flakes, nuts, unsweetened baking chocolate chunks, dried cranberries.  You can top with natural peanut butter drizzle.

Optional: If you go for a sweeter brownie you can add chocolate chips or sweetener of choice to taste(1/3 cup is usually what I'd do).

Directions:
1. Preheat oven to 350F
2. Combine all wet ingredients and dry ingredients separately, and then mix together.
3. Pour and spread into an 8X8 baking dish (greased or covered with parchment paper<-- my personal favorite)
4. Bake for 30-40 min until toothpick comes out mostly clean in the middle.
5. May top with chocolate chips or natural peanut butter drizzled on top (but no need). Enjoy!

I give you nutrition facts for 1/4th of the pan!  So halve them if you do eight brownies.
