Lentil Tacos or Burritos

Still enjoying finding new ways to enjoy beans and lentils! Here's my newest way!  Skip the ground beef for more nutritious, but still full of protein, lentils!
Lentil Tacos/ Burritos
Ingredients:
1 cup lentils dry
2 beef boullion cubes
2 cups water
1 onion diced finely
1/2 cup ground walnuts (opt)
8 oz of finely chopped mushrooms
Small can tomato paste
1/2 cup water
Taco seasoning
1 tsp powdered garlic
Salt to taste
Plus all the other taco or burrito fixings!
Directions:
1. Cook the lentils in the water and boullion (about 15-30 min--follow lentil bag)
2. Cook onion and mushrooms in large saucepan and then add the lentils and rest of the ingredients and simmer till it thickens to a ground beef consistency.
3. Use with favorite toppings for tacos or burritos or burrito bowls!
