Fruit-Sweetened Pumpkin Banana Cookies
My son, who isn't allowed to have sugar (other than fruit), and I like to eat these cookies for breakfast, because they taste great and are THAT good for you. High in so many nutrients including vitamin A, Omega 3s, fiber, protein, and healthy fats. I like to add raisins and other dried fruits to them.
Fruit-Sweetened Pumpkin Banana Cookies
Ingredients:
2 tbs ground flaxseed
1 cup pumpkin puree
3 ripe bananas pureed
1.5 cup oats
1 cup unsweetened shredded coconut
1/2 cup almond flour
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 tsp vanilla
1/4 cup peanut butter (no sugar added)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup- 1 cup raisins (or cranberries or nuts, etc)
Directions:
1. Preheat oven to 350F
2. Combine all ingredients.
3. Spoon onto parchment paper covered cookie sheet and flatten (can use wet bottom of a glass or wet hands)
4. Bake for 25-35 minutes until slightly golden
5. Store in fridge or freezer.
