Fast and Easy Cowboy Caviar Salad

This is an easy salad to prep at the beginning of the week for a fast, nutrient dense meal or snack!  You can eat it as a salsa with tortilla chips as well, if you want. So much flavor!  So easy.



Fast and Easy Cowboy Caviar Salad

Ingredients:

2 sm cans diced tomatoes
1 sm can of corn (can use a bag of frozen instead)
2 sm cans black beans
1 small red onion finely diced
4 tablespoons olive oil
4 tablespoons lime juice
4 tsp cumin
1 tsp salt
Bunch of cilantro finely chopped (but I've used dried cilantro too!)
Red pepper flakes to taste
Optional: diced bell pepper, or my favorite: diced mangoes (can use frozen)!


Combine all ingredients and enjoy!
