Healthy Burrito Bowl - So Filling, But 1/2 The Calories (470)!


We've been eating burrito bowls for dinner.  YUM! So tasty, so much nutrition, and so filling! Had to whip up some more Pico (I use canned diced tomatoes, when fresh aren't on sale, and it still tastes great!), guacamole and fajita veggies this afternoon. This, plus the extras that don't require prep, should feed us for 4 days of dinners.

This is the breakdown of my burrito bowl: 

2 cups shredded lettuce
1 cup cooked peppers and onions
1/4 cup black beans
1/4 cup pinto beans
1/4 cup guacamole
1/4 cup Pico de Gallo
1/4 cup Salsa Verde
1/4 cup whole milk yogurt (instead of sour cream)
1/4 cup cooked ground turkey (seasoned with taco seasoning)

This all adds up to a LOT of food, flavor, and only 470 calories! I'm always stuffed to the gills after this bowl.
