High Protein, Creamy Spinach Vegetable Soup (250 Calories)


Sometimes I just want something warm and creamy.  However most creamy soups are high calorie.  This soup uses fat free cottage cheese instead of whipping cream or sour cream, and it's VERY satisfying. A whole 1/4 of this recipe is only 250 calories roughly and about 35 grams of protein, 10 grams of fiber, and packed full of nutrition!  Like I always say:  Don't just feed your body--FUEL IT!

Creamy Spinach Vegetable Soup

Ingredients:

4 cups vegetable/ chicken stock/broth* (can do 4 cups water with 6 buillion cubes instead)
2 medium yellow onions quartered
3 bell peppers seeded and quartered
10 oz bag of spinach
1 lb head of broccoli cut into large chunks
½ head of garlic minced
24 oz fat free cottage cheese
1 package mushrooms
6 tbsp nutritional yeast
1 tsp celery seed or to taste
1 tsp thyme or to taste
1 tsp sage or to taste
Salt and pepper to taste
Optional spices: bay leaves, cayenne, nutmeg
*You can add more or less of this, depending on how thick you want your soup.
  ** You can really use almost any vegetables. I used peppers and mushrooms, because I needed to use them up. Cauliflower, carrots, other wilted salad greens--you name it-- probably would work.

Directions:

1. Add vegetables to stock in large pan and boil until softened.
2. Add cottage cheese and nutritional yeast and cook for a few more minutes
3. Puree in blender the vegetables with stock in divided portions until entire soup is pureed. Return to large pot and add remaining ingredients and spices to taste.
