Tuna Scramble


This may not look very exciting, but I've been craving and eating this all week for breakfast or lunch. With a whopping 42 grams of protein (that is half of my daily protein requirements, people, as a third trimester preggie! So no pressure meeting them today.) and only 340 calories, maybe it's just this baby making it sound so good. Whatever it is, I can't get enough.

What's in this scramble?

2 large eggs
1 small can tuna
2 cups of spinach
1/3 cup shredded mozzarella
Salt and pepper to taste.

Honestly, looking at the ingredients, I'd never thought about trying tuna with eggs -- but I love it!
