Lentil Sloppy Joes


I am not a vegan, but I do see the health and environmental benefits of eating less meat.  Recently I've been on a lentil and legumes kick, since they truly are super nutritious and tasty meat alternatives. These sloppy joes are really easy to make and taste great! I may never eat traditional again, since these definitely answer the sloppy joe craving for me. 

Lentil Sloppy Joes

Ingredients:

1 cup lentils dry
2 bouillon cubes
2 c water
1 diced pepper finely chopped
1 onion finely chopped
8oz mushrooms finely chopped
15 oz tomato sauce
1/2 cup ground walnuts (can toast ahead of time to remove bitter taste) -optional
1 packet McCormick sloppy Joe seasoning
2-3 tbsp Worcestershire
3 tbsp brown sugar
Salt and pepper to taste

Directions:

1. Boil lentils, bouillon, and water 30 min and drain.
2. Combine the rest of the ingredients in large saucepan and simmer till veggies are cooked, then add the cooked lentils.
3. Simmer till consistency is thickened a little more (Sloppy Joe's consistency).
4. Enjoy on a hamburger bun, mashed potatoes, baked sweet or white potato, or however you like your Sloppy Joe's.
