This is a great soup for when you have a cold and need something hot and spicy. That is currently my whole family right now. Love this soup!  Honestly, I am a dump and pour cook, so the seasoning ratios may be a little different each time, but this is the general recipe.  Also, you will notice I use several frozen veggies. Since having kids, I realized this was a great way to cut down on prep-work/ chopping time.  Also, sometimes it's less expensive than using fresh.  Recent studies are showing that frozen veggies are just as nutritious (if not more) than fresh produce in the grocery store, because it is frozen at the peak of freshness. 


Spicy Thai Coconut Curry Soup

Ingredients:

1 lb of chicken, cooked and shredded
6 cups chicken broth
20oz bag of frozen peppers and onions (or you could use fresh)
2 bags frozen broccoli florets (fresh is also fine)
2 cartons of mushrooms sliced
4 cups snap peas de-veined
1 bag shredded carrots
1/2  head of garlic, minced
2 inches of ginger minced/shredded
1.5 tablespoons lemongrass minced
2 cans unsweetened coconut milk
2-3 tablespoons Mae Ploy Thai Red Curry Paste, more or less, if you want more or less spicy
1 tablespoon lime juice
Soy sauce to taste
2 tablespoons sesame oil (unnecessary, but I like it)
Salt to taste
2-3 tablespoons sugar

Garnish with chopped cilantro, thai basil (or regular will work), and diced green onions.

Directions:

Combine all ingredients in a large pot and simmer. Add seasonings to taste.  Makes about 8-10 servings.



My beliefs about Christianity and politics have changed a lot in the past five years. The change was slow and subtle, but all those subtle changes added up to big changes, ultimately. I have concluded that I lived most of my life not understanding the simplicity and freedom of the gospel. Being a Christian should feel like freedom, not bondage. As my husband reminded me this morning, "If we define being a Christian as anything outside of trusting in Christ's work alone for salvation, we are adding to the gospel." Being pure is not Christianity. Following rules is not Christianity. Self-control and practicing a series of spiritual disciplines is not Christianity. Voting a certain way is not Christianity. If we define ourselves by any form of effort or practice, we are adding burden to ourselves that Christ did not add. "His yoke is easy and His burden is light."

Jeff chose my firstborn Romo's middle name to be "Assurance". I love Jeff's story for that (for another time - feel free to ask him about it). But I chose our second born son Witten's middle name to be "Acceptance", because it encapsulates much of my recent faith journey.

Acceptance is something I now realize I fought and worked so hard to gain most of my life, all the while not realizing that I already had it. If you have placed your faith in Christ's finished work on the cross, you forever and always have acceptance and favor from God. It is not contingent on you at all. It is ONLY contingent on Christ. That is the freedom. We don't have to work or strive or try to keep God's acceptance or favor. We already have it. Through Christ, we can approach God anytime, always, no matter what. Works accomplish nothing spiritually. Purity accomplishes nothing spiritually. We are incapable of cleaning ourselves up. The commands in the Bible aren't a prescription for how to make God happy or pleased with us, like I used to believe. The law in the Bible only serves to remind us that we cannot do it or keep it. It reminds us that we need Christ. We can't "be good". We will always fail to "be good". Only Christ is perfect. The only factor in whether I am accepted by God is whether I have put my trust in Christ's work on the cross. That. Is. It.

So where does that leave me, if I can't "do" anything, good or bad, to change my standing before God? It leaves me resting. I can rest in Christ's work alone, and stop worrying about my own. I can rest in God's favor and love. I can rest.


I'm now a mom of two and the days can start to melt together in monotony.  Decided to try to give us a little more consistency and tap into my need for creativity. Behold our refrigerator magnet schedule! This  project took me longer than I anticipated thanks to constant kid interruptions 😂. Thought it would be a day project and it took me almost a month instead! But it was fun, nonetheless! Thought it would be a fun way to plan our days and allow Romo (my almost 2 year old) to feel like he has some choices and control as well.

So now at the beginning of each day, my son and I have a planning session.  I put up the non-negotiable things ahead of time (napping for sure!), but then I let him choose the rest of the day.


It's been a fun activity in itself.  It's teaching him about waiting and how time works, as well.

Nov. 18, 2018.  This colored pencil drawing was born out of a summer of seeing snakes - literal and figurative.  This year I've seen snakes everywhere. I'm terrified of snakes, so this has been a dreadful experience. I have run into five in my yard, and six in my everyday life on walks and in nature.  Three of those snakes were copperheads, the rest were harmless, but still scared me silly.  I seriously have not seen so many snakes, ever like I have this year.  This all came to a head when, while one evening making my son dinner I turned around in my kitchen and found a snake on my kitchen counter. To this day, i still have NO idea how it got on my counter, but it shook me up to the core.  

Well, the next day was Sunday and the preacher gave a sermon and used this verse:  Matt. 7:9-11 "You parents—if your children ask for a loaf of bread, do you give them a stone instead? Or if they ask for a fish, do you give them a snake? Of course not!"  I remember thinking,  I'm not asking for snakes and yet you are giving them to me, God. These couldn't all be coincidences.  I decided, maybe God was trying to tell me something or get my attention. It was at this point I found myself praying, "God, teach me the lesson of the snake. What are you trying to tell me here?"   I found myself meditating on the passage from the sermon and a week later the answer dawned on me. That passage continued Matt 7:11, "So if you sinful people know how to give good gifts to your children, how much more will your heavenly Father give good gifts to those who ask him."

What was the lesson of the snake you ask?  I realized I've recently been looking at some of God's gifts in my life and calling them snakes, because I don't understand how they could be good.

Sometimes when God doesn't give me what I want and answers another way that doesn't fit my plan, I get upset and jump to label it a snake. But, as God tells us, HE also doesn't give us snakes when we ask for fish. So maybe I can't see how the gift is good right now, but I must trust that it is, because I have a Father who loves me more than I love my own son.  

Update: It's been a year since I finished this artwork to remind me of the lesson of the snake, and I have only seen two snakes while gardening this year (both little harmless brown snakes).  Every time I see or think of snakes now, I ask myself, "Is there something that God has given me in my life that I'm labeling a bad gift? God says he doesn't give bad gifts, so I must choose to trust it is good."

Thanks, Father, for the lesson of the snake.  I needed it!  

Sometimes I just don't feel like cooking... Strike that! I never do! That's why I'm a huge fan of meal prep and big one pot/pan meals that last for days.  If I do make things for my meals, I want fast and convenient.  One thing I have become addicted to since getting pregnant with my second baby and even more so after he was born (i.e. since I've become super exhausted and feel like I have no time to cook with two under 2yrs) is bagged chopped/slaw salads!  I found that Kroger often was marking them down to $1.99 or $1.49, so I started buying the mark downs. When I discovered these salads they turned my view of salad upside down.  I'm not a fan of the lettuce or greens salads...they just always lacked pizzazz for me, and never really filled me up. Chopped and slaw salads have so much texture and crunch as well as a TON of fiber, so they actually make me feel full.  Paired with tasty toppings and dressings, I find myself excited to eat them!  I eat a whole bag for a meal. On days when I'm feeling very lazy (which is a lot), I eat two bags - one for lunch and one for dinner! They are a tasty fast-food alternative! When I eat a chopped or slaw salad,  I generally can be confident that I'm filling my stomach with healthy, chock-full-of-veggies, nutritious food!

As amazing as these salads are, at full price (4-5 dollars a bag), I don't feel as great about eating two a day. So when I can't find them marked down or on sale, I choose to make my own. If measuring out the toppings each time sounds tedious to you, you could always pre-measure them for the week into Tupperware or plastic baggies.


Let's Have a Salad Bar Party Every Week!

Here is how I make my salads with prices of my ingredients and per salad.  Assume prices to be based on Walmart Great Value/ store brand unless otherwise noted.


All About That Base (~100 calories per 8-12 oz, ~$1.07):

First you need a base for your salad.  I don't enjoy chopping, so I do still buy bags of coleslaw mix or broccoli slaw (I try to not spend more than $1.99 per 8-12oz portion, personally).

Trader Joe's sells the most affordable organic broccoli slaw I've seen. 12 oz at $1.99.

Walmart sells non-organic broccoli slaw in 16 oz bags for about $2.58 (that's $1.29 per 8oz).
If you want to do a chopped style salad you can buy coleslaw mix instead. 16 oz bags from Kroger or Walmart run from $1.50- 1.70 per bag.

Often I'll mix a 16 oz bag of coleslaw mix with a 16oz bag of broccoli slaw mix and divide it into 4 salads. That comes out to about $1.07 per salad.

One 8-12oz portion of a coleslaw/ broccoli slaw mix is going to be about 100 calories - so that leaves a LOT of room for tasty dressing and toppings!

Toppings(the fun begins!):

Fruits/Veggies:
Reduced-sugar craisins (100 calories/ $0.42 per 1/4 cup)
Diced Apple (1 apple is about 100 Cal, price varies)
Sweet Corn (45 calories/ $0.15 per 1/4 cup)
Berries fresh or dried
Cherry tomatoes (fresh or dried) (1 cup fresh is about 40 calories, price varies)
Diced Avocado (1/2 of a sm avocado is about 150 calories, price varies)
Broccoli and cauliflower florets (1 cup is 30 calories, price varies) 
Diced/ chopped bell peppers (30 calories/$0.75 per pepper[1/2 cup diced]) 

Nuts/Legumes:
Chopped peanuts (160 calories/  $0.12 per 1/4 cup)
Sunflower seeds (160 calories/ $0.16 per 1/4 cup)
Chopped Walnuts (190 cal/ $0.56 per 1/4 cup)
Slivered or sliced Almonds (160 cal/ $0.43 per 1/4 cup)
Chopped pecans (200 calories/ $0.71 per 1/4 cup)
Dry Roasted Edamame (130 calories/ $0.55 per 1/4 cup)
Dry Roasted Chickpeas (140 calories/ $0.55 per 1/4 cup)
Canned Chickpeas (130 calories/ $0.30 per 1/2 cup)

Dressing (measure and watch your portions, because it's easy to accidentally add too much!):

Ken's Lite Sweet Onion Dressing (160 calories/ $0.25 per 1/4 cup)

Bolthouse Avocado Cilantro Greek dressing (80 calories/ $0.44 per 1/4 cup)

Thai Peanut Dressing (haven't found a dressing store-bought yet-if you know of one, let me know!)

Other Fun Options (not necessary at all, but tasty. Just be very careful to not go overboard with your portions of these):

Cheese Generally (80-110 cals and $0.25 cents per 1/4 cup GV brand):
-Parmesan (my fave)
-Feta
-Mozzarella
-Cheddar
Bacon bits (60 cal/ $0.26 per 2 tablespoons)
Croutons (varies)
Corn chips (160 Cal / $0.20 per 1oz =~30 chips)


See?  So many options! I try to add something from each category!


My Favorite Salad Combinations:

Broccoli Slaw Salad (pictured at top)

4oz broccoli slaw
4oz coleslaw mix
1/4 cup cranberries, 
1/4 cup sunflower kernels
1/4 cup Ken's Lite Sweet Onion dressing
1/4 cup bacon bits 

580 cal and $2.16/per salad

Southwestern Chopped Salad

















4oz broccoli slaw
4oz coleslaw mix
1/4 cup sweet corn
1/4 cup sunflower kernels
1/4 cup Avocado Cilantro Dressing
1/2 cup Diced tomatoes
1 oz corn chips

 600 calories and $2.22 per salad

Thai Chopped Salad

4oz broccoli slaw
4oz coleslaw mix
1 Bell pepper diced
1/4 cup corn
1/4 cup peanuts
1 apple diced
1/4 cup Thai peanut sauce

555 calories, $2.64 not counting dressing per salad 







This week's post is by my good friend and family member, Christi Toth. She is an amazing mother to three (third one set to make her appearance any day now). She has been an encouragement to me as long as I've known her, and she shares some thoughts in this short post that I hope will uplift others as much as it uplifted me! It's so easy to convince ourselves as moms that we don't have time for quiet time with God (I know I struggle with that!) with the constant noise, busyness of housework, and young kids. Sometimes it feels like making the time isn't worth it. Here is what Christi encouraged me with the other day:

I had kind of an epiphany several months ago after hearing a message about when the Jews were returning to Jerusalem after the exile and rebuilding.  It was based out of Haggai 1 where God is rebuking them for focusing on their lives/ comfort/ work but not rebuilding his temple. He says that they strove constantly but saw little fruit (plant much, harvest little, eat but are never full, wear clothes but are never warm, etc).

I could see in those conditions people saying what I often feel... just keeping up with my day-to-day life takes up so much time and effort, how can I even think about adding one more thing (bible reading, prayer, whatever service I feel God is calling me to, etc)?  I realized that I've often heard this principle applied to finance (tithe first, and just see how God provides; can't afford NOT to tithe, when I don't tithe there is never enough money), but had never applied the principle to my time, especially as a parent. I'm constantly striving in my "mom work" and never done and never feeling like I can keep up, BECAUSE I'm not making God a priority in my time. Putting dishes over devos pretty much guarantees the dishes will NEVER be done, the laundry will always be overwhelming, etc.  But, by prioritizing time with God, all of a sudden that stuff somehow gets done so much faster and easier. Not as weighty. Not as overwhelming, or depressing, or as much pressure. Basically, that work becomes blessed instead of cursed.

I guess it's probably an obvious principle, and one I have heard before, but it hit me like a wall of bricks. So the last several months I've been really focusing on changing my mindset and priorities. I can see a very big difference in my daily workload in the weeks I actually spend time with God daily and the weeks I don't. It's been pretty eye opening, but also hard to do.  I've never been good at setting aside the to-do list and just sitting with God. Relationship is probably the hardest part of Christianity for me to grasp. But I'm hoping this is the year something clicks in that regard!

My son isn't allowed to have added sugar, so it can make events where cake is served more difficult.  This is my recent toddler-friendly cake recipe. Pretty quick to whip up and cook in the microwave in a pinch! My recent try was baking it in a donut-shaped container for "National Donut Day" so that my son could still participate.

Fruit-Sweetened Mug Cake

Ingredients:

3 tablespoons mashed sweet potato or pumpkin
1 pureed ripe banana
1/4 cup dried fruit pureed (I used prunes because my son loves them)
1/2 tsp vanilla
2 tablespoons flaxmeal(or flour of choice... Might even be able to do whey protein)
1 egg
Optional add-ins: 1/2 tsp cinnamon, 1/4 tsp ginger/nutmeg/cloves for a spiced cake (add more to taste for more spice), or 1-2 tbsp cocoa powder for chocolate.

Directions:

Pour into mug (may need two mugs, depending on how big mug is), ramiken, or microwave-safe donut molds. 

Microwave 1.5 -2.5 minutes or until toothpick comes out clean.

This recipe would be great for making a personal amount of cupcakes, too, probably... I just don't know baking details yet, since I haven't tried.

Toppings:
Can top with shredded unsweetened coconut like in the picture or peanut butter / crushed peanuts, or Chocolate Bean Hummus, or banana mixed with cream cheese.
